Is there a way to bulk add lessons? We have a course that will have 75 lessons. Rather than adding a new lesson 75 times, and clicking through all of the same things, is there a way to add them all at once?

You should take a look at the replicate module.
https://www.drupal.org/project/replicate
It does not offer any interface to do it out of the box, but if you take a look at it and the hooks it provides you should be able to accomplish what you want.
